Choose any fish that you lile but I like a firm fish such as tilapia
4 fillets
1 small onion
1 clove garlic
1 tbps.capers
1 C white wine or stock or water
1 C flour
1 tsp. Old bay
2 Tbsp. Olive oil
Start by cleaning your fish in cold water and cut out the dark blood line on the tilapia (saute and give to your dog or cat very fishy) dry off and set aside
Fine dice your garlic and onion, get your sautee pan on med high heat with a tbsp Of olive oil sautee onion and garlic just till soft and remove from pan
Add old bay to flour and coat fish filets
Add remaining oil to pan and once hot add fillets till toasty brown return onion garlic capers and wine to pan heat to cook off alchohol and thicken add a little butter or salt and pepper to taste serve over brown rice
Serves 2-4 people
